Environmental Statement

Food at WALA: Organic products fresh to the table

WALA is also committed to protecting the environment in its food and beverage services. By giving preference to local products, we strengthen the regional economy and promote agriculture in the area. This also helps to reduce shipping costs and packaging waste. Moreover, we know and appreciate our suppliers and the high quality of their products, while the food we receive is absolutely fresh. Milk, yogurt, fruit, apple juice and bread are obtained whenever possible from the neighbouring Demeter “Sonnenhof” farm, which also belongs to WALA.

In purchasing our products, we follow fair trade guidelines by establishing long-term business relationships according to fair, agreed-upon criteria. Paying higher prices improves the quality of life for people in the agricultural regions of poorer countries – this is the model promoted by the GEPA Fair Trade Company, which also supports organic farming.

75% of the items on our menu are of Demeter or organic quality, as are numerous other products including tea, apple juice, granola, yogurt and milk. We place great value on natural cultivation with crop rotation and organic fertilisation. We are also concerned with humane livestock raising and feeding. The caterer that provides our lunches has been certified by an independent certification body for organic food.

It goes without saying that we make a point of serving not only regional but seasonal food. Fruits and vegetables harvested at their peak are fresher, richer in vitamins, and simply taste better.
